Matanzas have been a part of New Mexico’s Hispanic culinary culture since the Spanish first introduced pigs to the Río Grande Valley. In the days before refrigeration, the slaughter of a fattened hog during fall and winter was a community celebration. Come out and enjoy New Mexico’s Heritage roots along with a spectacular Car show and Live Music!
